Raspberry Mousse

Serves 4

340g silken tofu (bought to room temperature)
225g fresh raspberries (reserve a few for garnish)
1 teaspoon vanilla extract
2 tablespoons honey (or rice malt syrup)

1. Combine all the ingredients in
a blender and blend until
2. Divide the mixture between four
glasses or bowls and chill for at least 2 hours.
3. Garnish with reserved raspberries (cherries or blueberries)
to serve.
